Ildefonso lives in Bruselas, southern Huila and is part of the Los Guácharos group. The group is a collective of small producers who are innovative and focused on quality. This is the third harvest Mirror has featured from Ildefonso Córdoba. Similar to their previous picks from this group cups from this coffee have a fruit and berry forward flavor profile all while being clean in the cup. The first experience with this bourbon aji reminded the Mirror team of a pleasant Kenyan. It's got dark berries, a tropical flavor profile, and with a tart aftertaste.
