Maragogipe—sometimes called \u003cem data-end=\"370\" data-start=\"354\"\u003eElephant Beans\u003c\/em\u003e—is known for its unusually large seeds and its elegant, almost old-world character. It’s also a challenging varietal to grow, which means you don’t see it very often.
