It’s marked by a clean cup with floral characteristics and distinct acidity and sweetness. As the coffee cools, the complexity and sweetness ramp up exponentially.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eDanche is the name of the small hamlet within Chelbesa town where this wet mill and coffee are from, in District Gedeb. This is one of the largest coffee producing areas in Gedeb, boasting semi-forested shade canopy in many parts, and altitudes ranging from 1900 to a staggering 2200 meters above sea level. The washing station Chelbesa is relatively new, having only been built back in 2019.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThis fully washed process coffee from Chelbesa exudes the clean florals we love when we drink a coffee from the Yirgacheffe region in Ethiopia. The Bourbon varietal lends itself to a well rounded body and the terroir produces gentle fruited notes with undertones of creamy 60% chocolate.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eIn particular, the team at Moxie love this coffee on espresso, as it pairs extremely well with milk-based drinks, like a cappuccino. The Aji Bourbon variety is a mutation of an Ethiopian Landrace. The coffee was named Aji because the mucilage has a smell and flavor similar to red peppers.\u003c\/p\u003e\n\u003cp\u003eThe acidity is almost effervescent. There’s brilliant red fruits throughout, followed by florals that remind the team at Moxie of jasmine and honeysuckle.
